Healthy Lobhia Tikki / Black-Eye Pea Patties


Ingredients

Pinch of salt
1/2 teaspoon Ginger garlic paste
Pinch of Turmeric powder
Pinch of red chili powder
Pinch of pepper
Pinch of coriander powder
Chopped green chilies (optional)
Oil spray
Water

Preparation Method
  • Soak black eye pea in water for over night 
  • Coarsely grind it into a paste adding little bit of water as and when required 
  • Add chopped green chilies, salt, turmeric, red chili powder, coriander powder, pepper etc and mix well. 
  • Now, heat non stick pan or a tawa and spray some oil on it. 
  • Take one table spoon full batter and drop it into the tawa. When its slightly cooked, press gently on top to form a round Patties shape. Spray some oil again on top and cook in medium heat. 
  • Serve it with any hot and sweet spicy sauce

Seasoned Fried Eggs



Ingredients:

Boiled Eggs
Oil
Salt
Pepper
Chili sauce
Seasoning of your choice

Preparation Method:
  • Stir fry boiled eggs in any oil 
  • Season it with all spices and chilli sauce 
  • Garnish with green fresh chillies or onions 
  • Serve it as snacks

Bread Pakoda



Ingredients

1 cup Besan/chickpea flour
3 Bread slices
1 green chili (Optional)

Small bunch of Chopped coriander

1/2 finely chopped onion
Pinch of turmeric powder
Pinch of red chili powder
Salt to taste

Pinch of baking soda/Soda-bicarb
Oil for deep frying
2-3 spoons of water

Preparation Method:

1. Take a bowl and add besan, green chili, onion, baking soda, salt, turmeric, chili powder and chopped coriander leaves, mix well.

2. Now to it add water little by little to form a batter.  The batter should be thick but of flowing consistency.

3. Keep the deep frying pan on medium flame to heat.  In the mean time slice the edges of the bread and cut them into triangles. 

4.  Now dip the bread triangles in to the batter and deep fry them.

5. Serve hot with tomato ketchup or any sauce you like as snack or breakfast.

Bread Rolls


Ingredients

Bread Slices
Boiled mashed potatoes
Chopped onion
Chopped green chilies
Salt to taste
Red chili powder
Coriander powder
Oil for frying
Water

Preparation Method
  • Add all the spices, salt, green chilies and onions to the mashed potatoes 
  • Take a bread slice and cut the edges.  Now slightly wet one slice and stuff it with the mashed potatoes mixture and bind it into a roll. Repeat the same process for others 
  • Deep fry in Oil and garnish with anything you like 
  • Serve it with chutney, ketchup or any sauce

Healthy Nutty wheat flour Ladoo/ Nutty Atta Ladoo



Ingredients:

1 cup wheat flour
3/4 cup powdered sugar
1 teaspoon cardamom powder
2 tablespoon ghee (clarified butter)
Cashews, almond, pistachio and other nuts you like crushed well

Preparation Method:

  • Heat 1 tablespoon of ghee and add wheat flour and fry mixing it every few seconds on low flame until you get nice aroma and color changes to golden brown. 
  • Now add sugar and mix again for few minutes and add cardamom powder and all the crushed nuts 
  • Now turn off the heat and add rest of the ghee and wait until the mixture cools a bit not completely 
  • Start binding ladoos now 
  • You can add more ghee if it’s becoming difficult to bind ladoos. 
  •  Let them cool to room temperature and store it in  air tight container

Savory French Toast



Ingredients:

2 eggs
2 slices bread
1/2 tablespoon milk
Pinch of salt
Pepper powder
Butter
finely chopped coriander leaves(cilantro)

Preparation Method:
  • Take a bowl and beat eggs, cilantro,milk, salt and pepper together 
  • Heat skillet/tawa on medium heat and add 1 teaspoon of butter 
  • Now dip bread into the egg batter and put it on the tawa 
  • Cook it both the sides until golden brown. Don’t cook longer. 
  • Serve it with ketchup of your choice

Onion Pakoda (Fritters)


Ingredients:
4 tablespoon Besan/chickpea flour
2 Finely chopped Onions
1 green chili
Pinch of turmeric powder
Pinch of red chili powder
Salt to taste
Oil for deep frying
2-3 spoons of water

Preparation Method:
  • Take a bowl and add besan, chopped onions, green chili, salt, red chili powder, turmeric powder and mix well. If the mixture is quiet thick add bit of water to it and mix well again. Mixture should be slightly sticky. 
  • Now heat oil for deep frying on medium heat. Take little bit of batter and dip into the pan to see if oil is ready for frying. Now start frying pakodas using same method. Fry it until it turns golden brown.
  • You can serve pakodas with any chutney you like or ketchup/sauce
